We're speaking with Brisa and Josep from Empordaigua, the Girona-based company revolutionizing the culinary world by designing the ideal water. They’re presenting their latest innovation, specially designed for coffee. 

What makes your system innovative?

The composition of the ideal water for the perfect coffee has been known for ages. But reproducing it was impossible until now. We could purify the water at any establishment and remove all undesirable dissolved elements, but we didn't know how to add the right minerals. Research on water's behavior enabled us to design a system that dissolves the desired minerals in a controlled and unlimited way. We're really happy because this invention led to our first patent.

How do you get a patent?

Easy: having an innovative idea and proving it! The Spanish and European Patent and Trademark Offices decide whether an idea is really an invention. It's a long and expensive process. But gaining official recognition lets us market it with ease.

What defines the perfect coffee? Why is it so hard to find?

With the ideal water and excellent coffee you're halfway there. But cleaning, grinding, water temperature and volume, and cup temperature determine the final result. Making good coffee takes a specialist.
